A LITTLE CEREMONY
The method.
Warm a suitable glass
Use a heatproof Irish coffee glass for one serving. Fill it with hot water to warm it, then carefully empty it.
Mix the warm foundation
Pour the measured hot brewed coffee, Irish whiskey, and caster sugar into the warmed glass. Stir until every grain of sugar has dissolved.
Prepare the cream
Lightly whisk the measured cold fresh cream with a fork for 15 seconds until slightly thickened but still pourable. Do not turn it into whipped cream.
Float the cool crown
Pour the measured cream slowly over the back of a spoon held just above the coffee. Leave the cream floating on top without stirring. Serve immediately; no ice is used.
