A LITTLE CEREMONY

The method.

  1. Prepare your glass

    Set out a clean rocks glass for each serving. Add 120 g of fresh cubed ice to each glass just before pouring.

  2. Measure, then stir

    Measure one serving of the liquid ingredients and bitters into a mixing glass. Add 180 g of cubed ice. Stir smoothly until the glass feels very cold. Repeat with fresh mixing ice for each serving.

  3. Strain with care

    Hold the ice back with a strainer and pour into the prepared rocks glass.

  4. The finishing touch

    Twist the orange peel over the drink, rub it around the rim, and place it in the glass.
