A LITTLE CEREMONY

The method.

  1. Prepare your glass

    Set out a clean julep cup for each serving. Fill it with 120 g fresh crushed ice just before straining.

  2. Measure into your shaker

    For one serving, gently press the measured citrus quarter-wheels for mixing with the caster sugar three times in the shaker. Add both measured sherries. Keep the separate garnish fruit aside.

  3. Shake until properly cold

    Use one serving of the measured ingredients per batch. Add 180 g cubed ice and seal the shaker. Shake firmly until the outside feels very cold. Repeat with fresh mixing ice for each serving.

  4. Strain and finish

    Use a cocktail strainer and a fine-mesh sieve to pour into the prepared julep cup. Double-strain through the cocktail strainer and fine sieve to hold the citrus pieces back. Add the measured raspberries and garnish quarter-wheels, then serve with a straw.
