The method.
Prepare your glass
Fill a clean champagne flute for each serving with ice and water to chill it while you mix. Empty it before pouring.
Measure into the glass
Pour the measured white peach purée into a chilled mixing glass for one serving. Add a few ice cubes to keep it cold.
Finish gently
Slowly add the measured Prosecco and stir once gently. Hold back the ice with a strainer while pouring into the chilled flute. Never shake sparkling wine.
The finishing touch
Serve immediately. This house specification has no garnish.
