A LITTLE CEREMONY

The method.

  1. Prepare your glass

    Set out a clean goblet glass for each serving. Do not put additional ice in the glass before blending.

  2. Load the blender

    Measure one serving of the liquid ingredients and bitters into the blender with 340 g crushed ice. Keep all garnish aside, and secure the lid.

  3. Flash-blend briefly

    Blend on high for five seconds only, just long enough to combine the liquids and break down the ice. Keep the drink slushy rather than making a smooth frozen drink.

  4. Pour and garnish

    Pour into the footed goblet with all the blended ice, then top with 40 g fresh crushed ice per glass. Add the measured cherries on a pick and the rectangular pineapple garnish; do not discard the blended ice.
