A LITTLE CEREMONY

The method.

  1. Prepare an empty chilled glass

    Chill a clean narrow highball glass with ice and water, then empty it. This drink is served without ice.

  2. Measure the creamy foundation

    Measure one serving of gin, both citrus juices, syrup, cream, pasteurized egg white, orange blossom water, and vanilla drops into the shaker. Keep all soda water aside.

  3. Shake thoroughly with ice

    Add 180 g cubed ice, seal the shaker, and shake firmly for two minutes, taking short pauses to keep a secure grip. Use fresh mixing ice for each serving.

  4. Build a fine foam

    Strain through a cocktail strainer and fine sieve into a clean empty shaker. Seal without ice and shake firmly for one minute to thicken the foam.

  5. Pour and lift gently

    Strain into the empty chilled highball glass. Slowly add the measured cold soda water down the inside of the glass, allowing the foam to rise. Do not add extra soda or stir away the foam.
