A LITTLE CEREMONY

The method.

  1. Prepare your glass

    Chill a clean narrow highball glass with ice and water, then empty it. This drink is served without ice.

  2. Measure into your shaker

    Measure one serving of gin, lemon juice, and syrup into the shaker. Keep all the soda water and the garnish aside.

  3. Shake until properly cold

    Use one serving of the measured ingredients per batch. Add 180 g cubed ice and seal the shaker. Shake firmly until the outside feels very cold. Repeat with fresh mixing ice for each serving.

  4. Strain and finish

    Use a cocktail strainer and a fine-mesh sieve to pour into the prepared highball glass. Pour the measured cold soda water into the strained drink. Stir once very gently to preserve the bubbles. Add the measured garnish and serve immediately.
