A LITTLE CEREMONY
The method.
Prepare your glass
Set out a clean rocks glass for each serving. Add 120 g of fresh cubed ice to each glass just before pouring.
Measure, then stir
Measure one serving of the liquid ingredients and bitters into a mixing glass. Add 180 g of cubed ice. Stir smoothly until the glass feels very cold. Repeat with fresh mixing ice for each serving.
Strain with care
Hold the ice back with a strainer and pour into the prepared rocks glass.
The finishing touch
Twist the measured grapefruit peel over the glass to release its oils, then place it beside the ice.
