A LITTLE CEREMONY

The method.

  1. Prepare a tall glass

    Set out a clean highball glass of at least 400 ml for one serving. Keep it empty; the shaken ice will go into the glass.

  2. Measure the still foundation

    Measure one serving of cognac, gin, lime juice, and bitters into a shaker. Keep all ginger beer and the mint garnish aside.

  3. Shake and pour with ice

    Add 120 g cubed ice, seal, and shake firmly until cold. Pour the complete contents, including the shaken ice, into the waiting highball. Repeat with fresh mixing ice for each serving.

  4. Finish with bubbles

    Add the measured ginger beer last and lift once gently with a bar spoon. Add the measured mint sprig; do not shake the ginger beer.
