A LITTLE CEREMONY
The method.
Prepare your glass
Chill the serving glass with ice and water, then empty it. Swirl the measured absinthe around the inside to coat it and discard the excess. Leave the glass empty; no serving ice is used.
Measure, then stir
Measure one serving of cognac, sugar cube, and Peychaud’s bitters into a mixing glass. Crush the sugar cube with a spoon and stir until it dissolves in the cognac. Do not add the discarded absinthe rinse. Add 180 g cubed ice and stir until cold; repeat with fresh mixing ice for each serving.
Strain with care
Hold the ice back with a strainer and pour into the prepared rocks glass.
The finishing touch
Add the measured garnish and serve immediately.
