A LITTLE CEREMONY

The method.

  1. Prepare your glass

    Fill a clean goblet glass for each serving with ice and water to chill it while you mix. Empty it before pouring.

  2. Measure into your shaker

    For one serving, gently press the measured cloves with the syrup three times. Add the pisco, pineapple juice, and lemon juice. Reserve all the dry white wine for the finish.

  3. Shake until properly cold

    Use one serving of the measured ingredients per batch. Add 180 g cubed ice and seal the shaker. Shake firmly until the outside feels very cold. Repeat with fresh mixing ice for each serving.

  4. Strain and finish

    Use a cocktail strainer and a fine-mesh sieve to pour into the prepared goblet glass. Double-strain the drink through a cocktail strainer and fine sieve to remove the cloves. Add the reserved measured dry white wine and stir gently once. Serve immediately. This house specification has no garnish.
