A LITTLE CEREMONY

The method.

  1. Prepare your glass

Set out a clean highball glass for each serving. Add 120 g of fresh cubed ice to each glass just before pouring.

  2. Measure into the glass

Pour one serving of the measured still ingredients into the prepared glass. Keep garnishes and sparkling ingredients aside.

  3. Finish gently

Add the measured sparkling ingredients last, if listed. Lift once gently with a bar spoon to combine; never shake carbonated liquids.

  4. The finishing touch

Add the measured garnish and serve immediately.
