A LITTLE CEREMONY

The method.

  1. Prepare your glass

    Set out a clean wine glass for each serving. Add 120 g of fresh cubed ice to each glass just before pouring.

  2. Measure into the glass

    Pour one serving of the measured still ingredients into each glass over the fresh ice.

  3. Finish gently

    Add any measured sparkling ingredients last. Lift once gently with a bar spoon to combine; do not shake carbonated liquids.

  4. The finishing touch

    Rest the measured lime wedge against the ice. Leave the tonic lively and serve immediately.
