A LITTLE CEREMONY

The method.

  1. Prepare your glass

    Set out a clean highball glass for each serving. Add 120 g of fresh cubed ice to each glass just before pouring.

  2. Measure into your shaker

    Measure one serving of the tequila, lime juice, and crème de cassis into a shaker. Keep the ginger beer and lime garnish aside.

  3. Shake until properly cold

    Use one serving of the measured ingredients per batch. Add 180 g cubed ice and seal the shaker. Shake firmly until the outside feels very cold. Repeat with fresh mixing ice for each serving.

  4. Strain and finish

    Use a cocktail strainer to pour into the prepared highball glass. Add the measured 90 ml ginger beer after straining and lift once gently with a bar spoon. Never shake ginger beer. Place the measured lime wedge against the ice and serve while the ginger beer is lively.
